Okay, so here goes (and I knew it would happen) I have altered a recipe a bit. I have made Bon Appetit’s Coconut Cream Cake but changed the icing. Originally it was a mint whipped cream: http://www.bonappetit.com/magazine/2008/09/coconut_mint_cream_cake
I see no value when making such a treat, throwing whipped cream on as the icing! Real cake, real icing. I have chosen to use a cream cheese icing with flaked coconut and decorated with lime and mint leaves.
How did it taste? I like you will have to wait to find out as I am saving it for guests tonight, but it really does look lovely.
In the mean time the kid is coming over for brunch on the deck today, so back to the kitchen…..
