Day 2 (recipe 3) Huevos Rancheros

IMG00374So the kid rides her brand new baby blue cruiser over, the deck looks amazing in the morning sun, I am making Mexican for guests tonight anyway so the supplies are here….
Bon Appetit’s recipe for Huevos Rancheros was better than the version I had in Mexico City last Fall. With the best of fresh ingredients this morning including farm fresh eggs, they were delightful, covered in cheddar and the wonderful avocado salsa.

  1. Avocado salsa? Now that sounds yummy. I always buy a bag of avocados from Costco and I am the only one that eats them. I keep two out to get nice and soft and keep the others in the fridge for later. I haven’t found a guacamole recipe that I like yet (I have purchased some spices from one of those home shopping thingys but I’m not crazy about the taste…) Maybe an avocado salsa recipe would be nice….please share…and good luck on your cooking quest.
