Auntie Loos’ Wedding Cakes

I spent Saturday morning at Auntie Loos’ Treats on Bronson. As you may already know it is one of my favourite places, and not just for the great baked goods, but because it is such a happy place, full of smiles, laughter, and it smells like Grandma’s kitchen.

I went this time to interview Kate Veinot cake decorator extraordinaire. I appreciated the time she spent with me as she was busy preparing a cake for that afternoon. Kate creates gluten-free and vegan wedding cakes, that not only taste fabulous but are really quite beautiful.

I felt like it was an interesting time to do this as the buzz around Chelsea Clinton’s wedding cake intrigued me. Chelsea offered a gluten-free beauty to her guests created by La Tulipe in Westchester County.

How long have you been decorating cakes?

2 years.

Are you vegan?

No.

What is your food philosophy?

Home made, home-grown, community, shop locally, animal rights.

Do you think the influence of celebrity weddings and wedding cakes is a good thing or will just contribute to short-term fads?

As long as it raises awareness, and we know why they are doing it, I think it’s a good thing.

Who influences your creativity?

Allan Dunn who is a renowned sugar flower artist, his details are so life like and Eddie Spence, official cake decorator to the royal family. His royal icing artist work is exquisite. His new book, The Art of Royal Icing is fabulous. I also like American Jennifer Dontz who travels and teaches courses.

What do you think sets you apart?

My attention to detail and my sugar art. I won’t copy others work nor will I duplicate my own.

What do you think you “owe” your client, the bride as the consultant?

It needs to be unique and reflect the client’s personal style. Like I said I won’t duplicate work, each cake is one-of-a-kind.

How long does a consultation last?

We like to do one consultation with the client, the timing depends on the clients needs.

What is the average price per cake (or what on average do brides spend)?

$800 to $1000.

What is your favourite flavour?

Earl Grey-delicious!

Whats your favourite food?

Avocado.

Smiles aside this is serious business. Weddings are one of the most important days in the lives of millions of people, and when folks are putting this kind of money out they want perfection. These cakes look perfect to me!
